It has been an off year for me, so deciding which origin I wanted to go with for this year's 80% was, thank the gods, a bit of an easy task thanks to the kits that I received throughout the summer. I knew I wanted something different, something that fit more of my personality and what I like vs what the general public enjoys. I love a chocolate that is bold and complex, yet versatile and easy to devour; one that is balanced while having a little bit of everything. Enter Bolivia.
It's dense, with a full chocolate backbone and natural sweetness that carries a complex, yet balanced blend of notes. Deep brown fruits, a slight nuttiness and clean earthiness - acidity, astringency and bitterness all wrapped into one. It highlights the unique beauty of single-origins and craft chocolate; of how nuanced each crop can be. It's what makes the hours of grinding it down and molding it 100% worth it.

Tasting Notes:
Naturally sweet, dense and bold with notes of deep brown fruits, a slight nuttiness and a clean earthiness wrapped in a balanced blend of acidity, bitterness and astringency.
